blueberry ~ buttermilk coffee cake

Absolutely love this coffee cake recipe.  It's pretty moist, and well actually it really reminds me of Costco blueberry muffins a bit.  Hope you can make it and enjoy!

Recipe:

Blueberry~Buttermilk Coffee Cake

1/2 cup butter

2 tsp. lemon zest

little twist of lemon juice

1 cup sugar

Cream these three ingredients together until smooth...

1 egg

1 tsp vanilla

Blend these two ingredients in the butter mixture...

Combine together..

2 cups flour

2 tsp. baking powder

1 tsp. salt

Alternate the flour mix with..

1/2 cup buttermilk

Fold in..

2 cups fresh blueberries

Preheat oven 350°

Spray with non-stick spray a 8" pan;

Bake 35-40 minutes; until cake comes out clean when tested.
